Find the rating plate inside the door frame first. A pyrolytic Smeg burns residue to ash at around 500 degrees and needs only a wipe afterwards. Every other Smeg has smooth Ever Clean enamel, which takes a non-caustic cleaner, a soak and a soft pad. Never put caustic near a coloured front.
There is a reason Smeg advice on the internet contradicts itself. People write "just run the self-clean cycle" and people write "never use the self-clean cycle", and both are describing a real Smeg, just not the same one. The badge on the door tells you almost nothing about how the oven inside is meant to be cleaned.
So this guide starts where every Smeg job should start, which is working out which of three quite different ovens you own. Get that right and the rest is straightforward. Get it wrong and the usual outcome is a stripped colour finish on a front panel that cannot be replaced for less than several hundred dollars.
First, identify which Smeg you have
Open the door and look at the rating plate. It sits on the inside of the door frame, usually along the left or right upright, sometimes along the bottom lip. It carries the model number, the serial and the electrical rating. Photograph it, because you will want it again the next time anything happens to this oven.
Then work through these three questions in order.
Does it have a pyrolytic cycle? Look for a dial position or menu entry named Pyrolytic, Pyro or a self-clean symbol, and check whether the door has a motorised lock. A pyrolytic oven locks itself shut for the duration and will not open until the cavity drops back below roughly 300 degrees. If there is no lock, it is not pyrolytic, whatever a marketplace listing said when you bought the house.
Does it have a steam or Vapor Clean function? This is a low-temperature cycle, usually around 90 to 100 degrees, that you start by pouring water into the base of the cavity or into a reservoir. It softens residue. It does not burn it away, and the difference matters more than the marketing suggests.
Is the cavity smooth or rough? Run a fingertip along the side wall when the oven is cold. Smeg's Ever Clean finish is smooth vitreous enamel with a slightly slick feel. It is easier to wipe than ordinary enamel, and it is not a catalytic liner. This is worth being certain about, because a catalytic liner is destroyed by scrubbing while smooth enamel is not, and Smeg is one of the brands where people assume the wrong one.
If the walls are smooth, you can clean them directly and firmly. That is the single most useful thing to know about a Smeg cavity.
What the self-clean cycle does not reach
A pyrolytic cycle is genuinely good at what it does. It takes the cavity to around 500 degrees and reduces baked-on fat to a fine grey ash you sweep out with a dry cloth. No chemicals, no scrubbing, no fumes worth worrying about in a ventilated kitchen.
It also leaves a surprising amount of the oven untouched, and this is the part that catches people out.
- The door glass is not cleaned. The inner pane gets hot but the film between the panes is outside the sealed cavity and stays exactly where it was.
- The racks and runners must come out first. Pyrolytic temperatures discolour chrome permanently, turning it a dull blue-grey. Smeg says to remove them and they mean it.
- The seal is not cleaned and does not enjoy the cycle. The door gasket ages faster with every pyro run, which is why an oven used on pyro monthly tends to need a seal years earlier than one that is wiped by hand.
- The frame, the fascia and the controls are outside the sealed area entirely. Everything you can see with the door open stays dirty.
Vapor Clean reaches less again. It softens light, fresh soiling so a cloth lifts it, and on a genuinely dirty oven it produces a warm, damp oven that is still dirty. It is a maintenance tool, not a rescue.
Cleaning a Smeg oven, step by step
This is the method for a cold oven with smooth Ever Clean enamel, which covers the large majority of Smeg ovens in Australian kitchens.
- 1Switch it off at the wall and let it go completely cold. Warm glass and cold liquid is how a toughened pane cracks, and warm enamel makes any cleaner flash off before it has done anything.
- 2Take out the racks, runners and any side rails. Most Smeg side rails unhook by lifting the front upward and drawing the rail forward off its rear peg. If a rail resists, stop and check the manual rather than levering it, because the peg mounts are spot welded and they do bend.
- 3Soak the racks separately. A bath or a laundry tub lined with an old towel, hot water and a non-caustic degreaser, left for an hour, does more than twenty minutes of scrubbing. The towel is there to stop chrome scoring against the tub.
- 4Apply a non-caustic oven cleaner to the cavity only. Base, sides, roof and the inner face of the door. Keep it off the fascia, off the door surround and off anything coloured. Give it the full dwell time on the label, which is usually fifteen to thirty minutes, rather than wiping it straight back off.
- 5Work the softened residue with a non-scratch pad. Ever Clean enamel takes firm pressure and a nylon pad without harm. What it does not take is steel wool or a scouring powder, which leave a dulled patch that then holds dirt worse than the original surface did.
- 6Deal with the fan and the rear baffle. Behind the back wall of most Smeg fan ovens is a removable plate held by a central nut or a few screws. Taking it off gives access to the fan blades, where a hard varnish of old fat builds up and is the usual cause of a persistent smell. If you are not confident, leave it and say so when you book, because it is a five-minute job for someone who does it daily.
- 7Rinse properly, then rinse again. Clean water, clean cloth, several passes. Cleaner residue left in a cavity is what makes the first roast afterwards taste of chemicals.
- 8Clean the glass and the frame last, so the grime you lift off them does not land back in a cavity you have finished.
What never to use on a Smeg
- Caustic oven cleaner on any coloured or cream front. Smeg's colour finishes on the freestanding ranges are enamel over steel, and caustic lifts and clouds them. This is not reversible and the panel is a special order.
- Caustic or abrasive cleaner on brass and chrome trim. The knob collars, bezels and handle mounts tarnish, and a tarnished brass collar on a Victoria is immediately visible against the ones either side of it.
- Steel wool, scourers and cream cleansers in the cavity. Ever Clean is a finish, and finishes have a thickness.
- A blade held flat against the door glass. If you must scrape, use a ceramic scraper at a shallow angle after softening, not before.
- Water sprayed into the cavity of a pyrolytic oven to "help" the cycle. The cycle is dry by design and the water has nowhere to go but the door seal and the vent.
- Anything at all on the fascia except a damp cloth. Printed markings around the dials come off, and they do not come back.
What actually goes wrong
We get called to fix these, so they are worth naming.
Stripped colour on a freestanding front. Far and away the most expensive Smeg mistake, and almost always caustic cleaner that ran down from the cavity onto the panel below, or a cloth used on the cavity then used on the front.
Blued racks. Chrome racks left in during a pyrolytic cycle come out permanently discoloured. They still work. They look wrong forever.
A door that will not seal after a glass clean. Smeg doors on the wider ranges are heavy and multi-glazed, and reassembly has to be exact. A spacer in the wrong slot leaves a millimetre gap that costs heat on every roast afterwards.
A smell that survives a full clean. Nine times out of ten this is the fan chamber behind the rear baffle, which most home cleans never open.
A tarnished brass collar on one knob and not the others, because the cleaner ran down one dial. Small, permanent, and the sort of thing an owner notices every day.
Should you clean it yourself?
A straight answer, since the internet is short on them.
Do it yourself if the oven is a built-in with smooth Ever Clean enamel, the soiling is light to moderate, and nothing on the appliance is coloured. It is a genuinely manageable Saturday job with a non-caustic cleaner and an hour of dwell time.
Run the pyrolytic cycle yourself if you have one, take the racks out first, and open a window. Then wipe the door glass and frame by hand afterwards, because the cycle did not touch them.
Get someone in if the oven is a coloured freestanding range, if there is brass trim, if the door needs to come apart, if the smell persists after a clean, or if it has not been done in years and the base has a hard black lacquer on it. Those are the jobs where the gap between a good result and an expensive mistake is widest.

Keeping it clean
- 1Wipe spills once the oven is warm rather than hot, and before they have been through another bake. Fat that has only been heated once comes off with a cloth.
- 2Cover fatty roasts for part of the cook. Most of what ends up baked onto a cavity roof arrived there as airborne splatter.
- 3Run the rangehood whenever you roast, so vapour leaves the kitchen instead of settling back onto the oven front.
- 4On a pyrolytic model, run the cycle two or three times a year rather than monthly. The gasket lasts considerably longer.
- 5Clean the door glass every few weeks. It is the surface you look at every day and the one that takes the least effort to keep clear.
