A cooktop is the hardest-working surface in the kitchen and the one most likely to be cleaned wrong. The reason is simple: gas, ceramic glass and induction look like three versions of the same thing, but they need three genuinely different cleaning methods. Use a scourer on glass and you scratch it forever. Soak a gas igniter and it clicks for a week. Use the wrong abrasive on induction and you dull a finish that is meant to stay glassy. The golden rule across all three is the same. Wipe spills while the cooktop is still slightly warm, never blazing hot, because a fresh spill comes off with a cloth while a baked-on one needs a scraper and patience. Almost every burnt-on mark we see is just a small spill that was left to carbonise over several cooks, layer building on layer until it is part of the surface. Gas Cooktops: Burners, Trivets and Igniters
Gas cooktops have the most parts and the most places for grease to hide, but they are also the most forgiving of a proper scrub because most of the surface is metal and enamel rather than delicate glass. The trick is to take them apart.
The routine that works:
- Lift off the trivets and burner caps once they are cool and soak them in hot soapy water to loosen baked-on grease
- Scrub the soaked parts with a stiff non-metal brush, paying attention to the underside of the trivets where grease builds up unseen
- Clear blocked gas ports on the burner caps with a wooden toothpick or a pin, never enlarging the holes
- Wipe the cooktop surface and around the burner bases with a degreasing cloth, applying product to the cloth rather than the surface
- Dry every part fully and refit it the same way it came off, with caps sitting flat and even
The one thing to protect is the igniter, the small ceramic-and-metal point that sparks the flame. Do not soak it, do not spray cleaner directly at it and do not leave water pooling around it. A wet igniter clicks repeatedly and fails to light until it dries out, which can take days. Keep liquid on the cloth and away from the spark point and the gas tap.
Ceramic Glass: Scraper, Cream, No Abrasives
Ceramic glass cooktops, the smooth black radiant type with the elements drawn underneath, look easy and are the easiest to ruin. The surface is a single sheet of toughened glass, and once it is scratched there is no fixing it. So the whole method is built around lifting grime off without abrasion.
The safe sequence is a proper ceramic-glass scraper held almost flat to the surface to shave off burnt-on residue, followed by a dedicated ceramic cooktop cream worked in with a soft cloth or paper towel, then buffed off to a shine. The scraper does the heavy lifting on hard marks; the cream handles the film and brings back the gloss. That is the entire job, and it works on the worst burnt-on sugar spills if you are patient.
What never to use on ceramic glass:
- Green scouring pads, steel wool or any wire brush, which scratch the glass permanently
- Abrasive powder cleansers, which leave a fine network of scratches that dull the surface
- A knife or metal scraper, which chips the edge of marks and gouges the glass; only a purpose-made glass scraper held flat is safe
- Cooktop cleaner left to dry on, which streaks and is harder to remove than if you buff it while damp
Spilled sugar or anything sugary is the genuine emergency on ceramic glass. If sugar melts onto a hot ceramic surface it can pit the glass permanently, so carefully scrape it off while the cooktop is still warm rather than waiting for it to cool.
Induction: Gentle Care for a Tough Surface
Induction cooktops have the same glass surface as ceramic, so the cleaning method is nearly identical, scraper for hard marks, cooktop cream for film, soft cloth to buff. The difference is that the glass stays much cooler because the heat is generated in the pan, not the surface, so spills are less likely to bake on hard in the first place. That makes induction the easiest of the three to keep clean if you wipe it after each use.
The one thing worth knowing is that induction glass can show white mineral marks and a dull film from hard water and from cooking residue more readily than it shows burnt-on grime, simply because nothing burns onto it as severely. A ceramic cooktop cream clears that haze and restores the gloss. As with ceramic, keep all abrasives away from it; the surface is tough against heat and weight but not against a scouring pad. Wipe it while faintly warm, use the cream weekly, and an induction top stays close to showroom condition.
