Soak the baffle filters flat in hot water with a non-caustic degreaser. On a renovation install, check whether the duct run was upgraded with the hood, because a wide canopy fitted to a duct sized for a smaller one is restricted at the duct rather than the fan.
Artusi hoods are mostly canopies with stainless baffle filters, distributed by Eurolinx and fitted predominantly during kitchen renovations rather than in original builds.
Renovation installs and the duct behind them
Because these go in during a renovation, they frequently replace a smaller hood, and the duct run behind them frequently does not get replaced at the same time.
A wide canopy asked to move air through a duct sized for a 600mm hood is restricted at the duct, and no amount of filter maintenance changes that. The useful diagnostic is whether the hood was ever satisfactory: one that used to cope and no longer does has a cleaning problem, while one that never coped from the day it was installed has a ducting problem, and those are different trades.
It is worth establishing before paying anyone to clean it, because a duct-limited hood produces a disappointing result no matter how well the filters come up.
Baffle filters, and why they suit a canopy
Artusi canopies generally carry stainless baffles rather than aluminium mesh: overlapping angled plates that force the air to change direction so grease runs down into a trap.
Baffles hold their extraction rate far better than mesh as they load, which matters on a wide canopy, and they survive far more cleaning cycles. Soak them flat for an hour in hot water with a non-caustic degreaser and brush along the channels rather than across them. Stainless, along the grain
The canopy is stainless and is worked along the brushed grain, never across it. On a wide canopy at eye level, swirl marks are visible from across the room in a way they are not on a small appliance.

Get someone in for the impeller housing, or to establish whether a hood that has never kept up is dirty or duct-limited. The Artusi cooktop and Artusi oven are usually the same age.
